Recipe: Easy Perfect Dinner - Salmon with Bokchoy


Ingredients:
 1 salmon
 4 spring onions
½ cup of coriander
 ½ cup mint leaves
2 tablespoons of soy
1 Teaspoon of grated ginger
2-3 bokchoy

Method:
     1.     Chop spring onions, coriander, mint leaves and place in a bowl
     2.     Add soy, lime juice & grated ginger to chopped greens, and set aside
     3.     Cook salmon in pan or on a BBQ skillet till pink in the middle
     4.     Steam bokchoy
     5.     Assemble:
          a.     First place bokchoy onto a plate
          b.     Then lay the salmon on top
          c.      Spoon over contents of greens over the top
     6.     Enjoy!

This is a very healthy dish to have either at lunch or at dinner. It is a simple, easy to make and also easy to clean up. It is high in protein and has low calories and not high in fat.
